French 75 with Lavender Syrup

On a recent trip to visit my mother, we went out to lunch after a day of thrifting and antiquing. The meal was delicious, but the drink I tried was divine. It was a French 75 with lavender simple syrup. Made with gin, prosecco, lemon juice, and lavender syrup, the drink was light, fruity, and floral – a lovely combination.

I thought it would make the perfect drink for that special Valentine’s Day dinner with your valentine or Galentine! The lavender syrup was easy to make and I just happened to have some lavender flower buds on hand. I had purchased them at an adorable tea and spice shop near where my kids go to college, but you can also order them online or grow and dry them yourself.

Lavender Simple Syrup

Combine 1 cup water and 1 cup of sugar in a saucepan. Heat on low, stirring occasionally until the sugar is completely dissolved. Add 1-2 tablespoons of lavender flower buds and bring to a boil. Boil for 1-2 minutes, remove from heat, cover, and let steep for 30 minutes.






Lavender simple Syrup is pretty and delicious. It really elevates this cocktail.


French 75 with Lavender Simple Syrup


In a cocktail shaker filled with ice, add 2 ounces of gin, 1 ounce of lavender simple syrup, and 1/2 ounce of lemon juice. Shake until very cold. Pour into a large martini or cosmopolitan glass, top with prosecco and enjoy. You can garnish with a lemon slice or twist of lemon zest.


This French 75 with lavender simple syrup makes a lovely Valentine’s Day cocktail, sure to impress your favorite Valentine.
